Oh how I just adore my morning smoothies. I always thought red beets were my favorite food, until I tried golden beets. They are so yummy and won’t stain your hands. Today I made a smoothie using carrot juice, cucumber, golden beets, pineapple, celery and blueberries. It is very refreshing, healthy and not overly sweet.
- 400 mL carrot juice
- 1/2 cucumber
- 1/2 C frozen pineapple
- 1/2 C frozen blueberries
- 2 stalks of celery
- 1 golden beet
Blend and enjoy! For an even sweeter taste, add more pineapple.
Yields 2 full glasses full. It’s a great breakfast, lunch addition or afternoon snack.
