I am fairly certain that lunch is the single most difficult meal to plan, and execute. You can only eat so many ham sandwiches, and salads. I mean….kids can eat the same food day after day for a long period of time, but I for one cannot. Every now and then I like to spice it up a bit, and surprise the kids with something a little bit more fancy then just ham and mustard. This sandwich was such a hit, they were begging for it for dinner too. I don’t get too many mom wins….this felt like a great achievement.
On a cold winter day, there isn’t really any other lunch I can think of, that could bring as much comfort as grilled cheese and tomato soup. Any sandwich can go from okay, to awesome by simply grilling it. This sandwich is no exception. My daughter (Buggy), absolutely loves this sandwich. It is so simple and so full of flavor.
- 2 slices of gluten free bread
- 1 slice of colby cheese (or your favorite cheese)
- 1-2 Tbls of BBQ sauce
- Grilled chicken, cut into thin slices
On medium heat, melt the butter in a skillet. Place one slice of gluten free bread in the pan, top with the chicken slices (they are best if heated first). Add the BBQ sauce on top of the chicken. Top with a slice of cheese and the second piece of bread. Toast each side until golden brown and everything is heated through thoroughly. Cut in half, and enjoy!
